For the Crust:

  • 2 cups grated parsnips
  • 1/2 cup unsalted butter, browned and cooled
  • 1 cup all-purpose flour
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, whisk together flour, cinnamon, nutmeg, baking powder, and salt.
  3. In another bowl, mix browned butter, brown sugar, eggs, and vanilla until smooth.
  4. Fold in grated parsnips and dry ingredients until just combined; stir in walnuts if using.
  5. Spoon batter into mini muffin cups, filling each about 3/4 full.
  6. Bake for 18-20 minutes until a toothpick comes out clean. Cool completely before frosting.
