For the Crust:
- 4 boneless, skinless chicken breasts
- 2 cups diced tomatoes
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Season the chicken breasts with salt, pepper, and oregano, then place them in the prepared dish.
- In a bowl, combine diced tomatoes, basil, garlic, balsamic vinegar, and olive oil to make the bruschetta topping.
- Spoon the bruschetta mixture evenly over the chicken breasts.
- Sprinkle mozzarella and Parmesan cheese on top of the bruschetta layer.
- Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Let rest for 5 minutes before serving.
