A flavorful and easy one-pan dish featuring tender chicken breasts topped with a fresh tomato-basil bruschetta mixture and melted mozzarella cheese, baked to perfection.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 cups diced tomatoes
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season the chicken breasts with salt, pepper, and oregano, then place them in the prepared dish.
  3. In a bowl, combine diced tomatoes, basil, garlic, balsamic vinegar, and olive oil to make the bruschetta topping.
  4. Spoon the bruschetta mixture evenly over the chicken breasts.
  5. Sprinkle mozzarella and Parmesan cheese on top of the bruschetta layer.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  7. Let rest for 5 minutes before serving.
