For the Crust:
- 1 lb Brussels sprouts, trimmed and halved
- 2 medium sweet potatoes, peeled and cubed
- 8 oz brie cheese, cut into 1/2-inch cubes
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped pecans (optional)
- 2 tbsp maple syrup (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). In a large bowl, toss Brussels sprouts and sweet potatoes with olive oil, garlic, thyme, rosemary, salt, and pepper until evenly coated.
- Spread the vegetables in a single layer on a large baking sheet or oven-safe skillet. Roast for 20-25 minutes, stirring halfway, until tender and lightly browned.
- Remove from oven and gently stir in brie cubes. Return to oven for 5-7 minutes, just until brie is slightly melted but still holds shape.
- If using, drizzle with maple syrup and sprinkle with pecans. Serve warm directly from the skillet.
