For the Crust:
- 1 sheet puff pastry, thawed
- 2 cups cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and black pepper to taste
- 8 oz burrata cheese
- Fresh basil leaves for garnish
- Balsamic glaze for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss cherry tomatoes with olive oil, oregano, salt, and pepper. Spread on the baking sheet and roast for 15 minutes, until softened.
- Roll out puff pastry on a second parchment-lined baking sheet. Prick all over with a fork and bake for 12-15 minutes, until golden and puffed.
- Let pastry cool slightly, then top with roasted tomatoes and torn burrata. Return to oven for 3-4 minutes to warm the cheese.
- Garnish with fresh basil and a drizzle of balsamic glaze before serving.
