For the Crust:
- 1 sheet frozen puff pastry, thawed
- 1 cup butternut squash, peeled and diced into small cubes
- 4 oz brie cheese, rind removed and cubed
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 egg, beaten (for egg wash)
- Flour for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, thyme, garlic powder, salt, and pepper. Roast on a baking sheet for 15-20 minutes until tender, then let cool.
- On a floured surface, roll out puff pastry sheet. Use a star-shaped cookie cutter to cut out pastry stars, placing them on a parchment-lined baking sheet.
- Top each pastry star with a few cubes of roasted butternut squash and a piece of brie cheese.
- Brush edges of pastry stars with beaten egg wash. Bake for 12-15 minutes until pastry is golden and puffed.
- Remove from oven, let cool slightly, and serve warm.
