For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/3 cup all-purpose flour
- 1/2 cup fresh lemon juice
- 2 tablespoons lemon zest
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper.
- In a bowl, cream together butter and 1/2 cup sugar until light and fluffy. Mix in 2 cups flour and salt until a dough forms. Press evenly into the prepared pan. Bake for 15-18 minutes until lightly golden.
- While crust bakes, whisk eggs, 1 1/2 cups sugar, 1/3 cup flour, lemon juice, and lemon zest until smooth. Pour over hot crust after baking.
- Return to oven and bake for 20-25 minutes until filling is set and edges are lightly browned. Cool completely in pan on a wire rack.
- Dust with powdered sugar, then cut into bars. Serve at room temperature or chilled.
