For the Crust:
- 2 large apples, peeled and diced
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup milk
- 1 tsp vanilla extract
- 12 soft caramel candies, unwrapped
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- In a bowl, mix diced apples, brown sugar, cinnamon, and nutmeg. Set aside.
- In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Stir in milk and vanilla until just combined. Do not overmix.
- Spoon a tablespoon of dough into each muffin cup. Add a spoonful of apple mixture, then press a caramel candy into the center. Top with another spoonful of dough, sealing edges.
- Bake for 18–22 minutes, until golden and cooked through. Let cool slightly before serving.
