For the Crust:

  • 3 medium apples, peeled and sliced
  • 1 cup cottage cheese
  • 1/2 cup maple syrup
  • 2 eggs
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp butter
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, melt butter and sauté apple slices with cinnamon and nutmeg until caramelized, about 8-10 minutes.
  3. In a bowl, whisk together cottage cheese, maple syrup, eggs, and vanilla until smooth.
  4. Combine flour, baking powder, and salt in another bowl, then fold into the wet ingredients.
  5. Spread caramelized apples evenly in the skillet, then pour the batter over the top.
  6. Bake for 25-30 minutes until golden and set. Let cool slightly before serving.

Notes

You can customize the seasonings to taste.
