A sweet and savory side dish featuring tender baby red potatoes caramelized with maple syrup, topped with creamy feta and toasted pecans for a delightful crunch.

For the Crust:

  • 1.5 lbs baby red potatoes, halved
  • 2 tbsp olive oil
  • 3 tbsp pure maple syrup
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped pecans, toasted
  • 1 tbsp fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss halved baby red potatoes with olive oil, maple syrup, smoked paprika, salt, and pepper until evenly coated.
  3. Spread potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and caramelized.
  4. Remove from oven and transfer to a serving dish. Top with crumbled feta, toasted pecans, and fresh thyme leaves. Serve warm.
