For the Crust:
- 1.5 lbs baby red potatoes, halved
- 2 tbsp olive oil
- 3 tbsp pure maple syrup
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped pecans, toasted
- 1 tbsp fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss halved baby red potatoes with olive oil, maple syrup, smoked paprika, salt, and pepper until evenly coated.
- Spread potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and caramelized.
- Remove from oven and transfer to a serving dish. Top with crumbled feta, toasted pecans, and fresh thyme leaves. Serve warm.
