Description

A festive side dish featuring crispy, caramelized Brussels sprouts tossed with tangy feta, crunchy walnuts, and a sweet-tart cranberry-honey glaze.

For the Crust:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup dried cranberries
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup crumbled feta cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper on a baking sheet.
  2. Roast for 20-25 minutes, stirring halfway, until sprouts are tender and caramelized.
  3. Meanwhile, in a small saucepan, combine cranberries, honey, and balsamic vinegar. Heat over low until cranberries soften and glaze thickens slightly, about 5 minutes.
  4. Transfer roasted sprouts to a bowl. Pour glaze over sprouts and toss to coat.
  5. Top with toasted walnuts and crumbled feta before serving.

Notes

You can customize the seasonings to taste.
