For the Crust:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup walnuts, roughly chopped
- 1/4 cup dried cranberries
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 1/4 cup crumbled feta cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes, stirring halfway, until sprouts are tender and caramelized.
- While sprouts roast, toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Set aside.
- In a small saucepan, combine cranberries, honey, and balsamic vinegar. Heat over low until cranberries soften and mixture thickens slightly, about 5 minutes.
- Transfer roasted Brussels sprouts to a serving dish. Drizzle with cranberry-honey glaze, then top with toasted walnuts and crumbled feta. Serve warm.
