For the Crust:

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped pecans
  • 2 tablespoons pomegranate molasses
  • 1 tablespoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, maple syrup, salt, and pepper.
  2. Spread squash in a single layer on a baking sheet. Roast for 25-30 minutes, until tender and caramelized.
  3. Transfer roasted squash to a serving dish. Drizzle with pomegranate molasses, then top with crumbled goat cheese, pecans, and fresh thyme.

Notes

You can customize the seasonings to taste.
