For the Crust:
- 1 sheet frozen puff pastry, thawed
- 2 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon brown sugar
- 1 tablespoon balsamic vinegar
- 4 ounces goat cheese, crumbled
- 1 teaspoon fresh thyme leaves
- Salt and black pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large skillet, melt butter with olive oil over medium heat. Add onions and cook, stirring occasionally, until softened, about 10 minutes.
- Stir in brown sugar and balsamic vinegar. Reduce heat to low and continue cooking, stirring occasionally, until onions are deeply caramelized, about 20-25 minutes. Season with salt and pepper.
- Roll out puff pastry on a lightly floured surface. Cut into 4 equal squares and place on prepared baking sheet. Score a 1/2-inch border around each square without cutting all the way through.
- Spread caramelized onions within the borders of each pastry square. Top evenly with crumbled goat cheese and thyme leaves.
- Brush the pastry borders with beaten egg. Bake for 15-18 minutes, until pastry is puffed and golden brown.
- Let cool slightly before serving warm.
