Description

Crisp layers, creamy centers, and deep caramelized flavor. Serve these tarts warm and watch them disappear.

For the Crust:

  • 1 sheet frozen puff pastry, thawed
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar
  • 1 tablespoon balsamic vinegar
  • 4 ounces goat cheese, crumbled
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large skillet, melt butter with olive oil over medium heat. Add onions and cook, stirring occasionally, until softened, about 10 minutes.
  3. Stir in brown sugar and balsamic vinegar. Reduce heat to low and continue cooking, stirring occasionally, until onions are deeply caramelized, about 20-25 minutes. Season with salt and pepper.
  4. Roll out puff pastry on a lightly floured surface. Cut into 4 equal squares and place on prepared baking sheet. Score a 1/2-inch border around each square without cutting all the way through.
  5. Spread caramelized onions within the borders of each pastry square. Top evenly with crumbled goat cheese and thyme leaves.
  6. Brush the pastry borders with beaten egg. Bake for 15-18 minutes, until pastry is puffed and golden brown.
  7. Let cool slightly before serving warm.

Notes

You can customize the seasonings to taste.
