A stunning fall dish featuring sweet, caramelized delicata squash rings, creamy whipped feta, spiced walnuts, and a tangy-sweet apple cider–honey glaze.

For the Crust:

  • 2 medium delicata squash, sliced into 1/2-inch rings and seeds removed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup crumbled feta cheese
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1/2 cup walnuts
  • 1 tsp ground cinnamon
  • 1 tbsp maple syrup
  • 1 cup apple cider
  • 2 tbsp honey
  • 1 tsp apple cider vinegar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss delicata squash rings with olive oil, salt, and pepper. Arrange in a single layer on a baking sheet and roast for 20–25 minutes, flipping halfway, until tender and caramelized.
  2. While squash roasts, prepare whipped feta: In a food processor, blend feta, Greek yogurt, and lemon juice until smooth and creamy. Set aside.
  3. Toast walnuts in a dry skillet over medium heat for 3–4 minutes. Add cinnamon and maple syrup, stir to coat, and cook 1 more minute. Remove from heat.
  4. In a small saucepan, combine apple cider, honey, and apple cider vinegar. Simmer over medium heat until reduced by half and slightly thickened, about 10 minutes.
  5. To serve, spread whipped feta on a platter, top with roasted squash, sprinkle with cinnamon walnuts, and drizzle with apple cider–honey glaze.

You can customize the seasonings to taste.
