For the Crust:
- 1 pre-made flatbread crust
- 1 cup fresh ricotta cheese
- 6 fresh figs, sliced
- 1/4 cup dried cranberries
- 1/4 cup balsamic vinegar
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place flatbread crust on a baking sheet.
- In a small saucepan, combine balsamic vinegar, dried cranberries, and honey. Simmer over medium heat until reduced to a syrupy glaze, about 8-10 minutes.
- Brush flatbread with olive oil, then spread ricotta evenly over the surface. Arrange fig slices on top and season with salt and pepper.
- Bake for 12-15 minutes, until edges are golden and figs are caramelized.
- Drizzle with balsamic cranberry glaze and sprinkle with fresh thyme before serving.
