For the Crust:
- 1 lb cremini mushrooms, cleaned and halved
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts, toasted
- 2 tbsp honey
- 1/2 tsp red pepper flakes
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil and butter in a large skillet over medium-high heat. Add mushrooms and cook until they start to brown, about 5-7 minutes.
- Reduce heat to medium, add minced garlic, smoked paprika, salt, and pepper. Cook, stirring occasionally, until mushrooms are caramelized and tender, about 10-12 minutes.
- While mushrooms cook, warm honey in a small saucepan over low heat. Stir in red pepper flakes and let infuse for 2-3 minutes, then remove from heat.
- Transfer caramelized mushrooms to a serving dish. Top with crumbled feta and toasted walnuts.
- Drizzle the hot honey over the mushrooms and garnish with fresh parsley. Serve warm.
