For the Crust:
- 1 lb (450g) cremini mushrooms, cleaned and halved
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 tbsp soy sauce
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- 4 oz (115g) goat cheese, crumbled
- 1/4 cup pecans, roughly chopped and toasted
- 3 tbsp honey
- 1/2 tsp red pepper flakes
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil and butter in a large skillet over medium-high heat until butter melts.
- Add mushrooms to the skillet in a single layer and cook without stirring for 4-5 minutes until browned on one side.
- Stir in minced garlic, soy sauce, thyme, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until mushrooms are tender and caramelized.
- While mushrooms cook, combine honey and red pepper flakes in a small microwave-safe bowl. Microwave for 15-20 seconds until warm, then stir to blend.
- Transfer caramelized mushrooms to a serving dish. Top with crumbled goat cheese and toasted pecans.
- Drizzle the hot honey mixture over the top and garnish with fresh parsley. Serve immediately.
