For the Crust:
- 1 wheel (8 oz) brie cheese, cut into 1-inch cubes
- 1/4 cup pure maple syrup
- 2 tablespoons brown sugar
- 1/2 cup fresh or frozen cranberries
- 2 tablespoons honey
- 1 tablespoon water
- 1/4 teaspoon ground cinnamon
- 1 package (about 30) mini phyllo cups or crackers
- Fresh thyme or rosemary for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange mini phyllo cups on a baking sheet and place a brie cube in each. Bake for 8-10 minutes until brie is soft and slightly melted.
- In a small saucepan over medium heat, combine maple syrup and brown sugar. Stir until sugar dissolves and mixture bubbles, about 3-4 minutes. Remove from heat and drizzle over baked brie bites.
- In another saucepan, combine cranberries, honey, water, and cinnamon. Cook over medium heat until cranberries burst and sauce thickens, about 5-7 minutes. Let cool slightly, then drizzle over brie bites.
- Garnish with fresh thyme or rosemary if desired. Serve warm.
