For the Crust:
- 1 sheet frozen puff pastry, thawed
- 1 lb cremini mushrooms, sliced
- 1 large onion, thinly sliced
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- 8 oz brie cheese, rind removed and cubed
- 1 egg, beaten (for egg wash)
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large skillet, heat butter and olive oil over medium heat. Add onions and cook until softened, about 5 minutes. Add mushrooms and cook until caramelized and golden, about 10-12 minutes. Stir in garlic, thyme, salt, and pepper; cook for 1 more minute. Remove from heat and let cool slightly.
- Roll out puff pastry on a lightly floured surface into a 12×9-inch rectangle. Cut into 12 equal squares using a sharp knife or pizza cutter.
- Place half of the puff pastry squares on the prepared baking sheet. Top each with a spoonful of the mushroom mixture and a few cubes of brie. Cover with the remaining puff pastry squares, pressing edges lightly to seal.
- Brush the tops with beaten egg. Bake for 18-20 minutes, until golden brown and puffed.
- Remove from oven, garnish with fresh parsley, and serve warm.
