For the Crust:
- 2 medium yellow squash, sliced
- 1 large yellow onion, thinly sliced
- 1 cup shredded Gruyère cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Heat olive oil and butter in a skillet over medium heat. Add onions and cook, stirring occasionally, until caramelized, about 20 minutes.
- Arrange squash slices in a baking dish. Season with salt, pepper, and thyme.
- Spread caramelized onions evenly over the squash, then top with shredded Gruyère.
- Bake for 25-30 minutes, or until squash is tender and cheese is golden and bubbly.
