For the Crust:

  • 1 lb parsnips, peeled and cut into 1-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, roughly chopped
  • 1/4 cup crumbled feta cheese
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss parsnips with olive oil, salt, and pepper on a baking sheet.
  2. Roast for 20-25 minutes, until parsnips are tender and caramelized at the edges.
  3. In a small saucepan, warm honey and cranberries over low heat until cranberries soften and mixture becomes syrupy.
  4. Arrange roasted parsnips on a serving platter, drizzle with cranberry-honey glaze, and top with walnuts, feta, and fresh thyme.
