For the Crust:
- 1 lb parsnips, peeled and cut into 1-inch pieces
- 2 tbsp olive oil
- 2 tbsp honey
- 1/4 cup dried cranberries
- 1/4 cup walnuts, roughly chopped
- 1/4 cup crumbled feta cheese
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss parsnips with olive oil, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes, until parsnips are tender and caramelized at the edges.
- In a small saucepan, warm honey and cranberries over low heat until cranberries soften and mixture becomes syrupy.
- Arrange roasted parsnips on a serving platter, drizzle with cranberry-honey glaze, and top with walnuts, feta, and fresh thyme.
