A vibrant salad featuring sweet caramelized pears, creamy ricotta, peppery arugula, and crunchy maple-glazed walnuts, all tossed in a light vinaigrette.

For the Crust:

  • 2 ripe pears, cored and sliced
  • 4 cups fresh arugula
  • 1/2 cup ricotta cheese
  • 1/2 cup walnuts
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and black pepper to taste
  • 1 tbsp butter

Instructions

1. Prepare the Crust:

  1. Heat butter in a skillet over medium heat. Add pear slices and cook until caramelized, about 5-7 minutes. Set aside.
  2. In the same skillet, toast walnuts with maple syrup until glazed and fragrant, about 3-4 minutes. Let cool.
  3. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
  4. In a large bowl, toss arugula with the dressing until evenly coated.
  5. Top the arugula with caramelized pears, maple-glazed walnuts, and dollops of ricotta cheese. Serve immediately.

You can customize the seasonings to taste.
