For the Crust:
- 2 ripe Fuyu persimmons, sliced into 1/2-inch rounds
- 4 oz brie cheese, sliced
- 1/4 cup walnuts, roughly chopped
- 2 tbsp hot honey
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- Pinch of sea salt
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil and butter in a skillet over medium heat. Arrange persimmon rounds in a single layer and cook for 3-4 minutes per side until caramelized.
- Top each persimmon round with a slice of brie and allow to melt slightly. Sprinkle with chopped walnuts.
- Drizzle with hot honey and garnish with fresh thyme and a pinch of sea salt. Serve warm.
