An elegant appetizer featuring creamy ricotta caramelized under the broiler, paired with sweet roasted grapes, all drizzled with honey thyme syrup on crispy crostini.

For the Crust:
- 1 baguette, sliced into 1/2-inch thick pieces
- 1 cup whole milk ricotta
- 2 cups red grapes, on the vine or off
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon fresh thyme leaves
- Salt and black pepper to taste
- 1 tablespoon balsamic vinegar (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss grapes with 1 tablespoon olive oil, salt, and pepper. Roast on a baking sheet for 15-20 minutes until softened and slightly burst.
- Brush baguette slices with remaining olive oil and toast in the oven or a skillet until golden and crisp, about 5-7 minutes.
- Spread a generous layer of ricotta on each crostini. Place under a broiler for 2-3 minutes until lightly caramelized and golden spots appear.
- In a small saucepan, warm honey and thyme over low heat for 2 minutes to infuse. Remove from heat and stir in balsamic vinegar if using.
- Top each crostini with roasted grapes, drizzle with honey thyme syrup, garnish with extra thyme, and serve immediately.
