For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 8 oz brie cheese, rind removed and cubed
- 1/2 cup dried cranberries
- 2 tbsp fresh thyme leaves
- 1/4 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Toss sweet potato cubes with olive oil, maple syrup, smoked paprika, salt, and pepper. Spread in a cast-iron skillet and roast for 20 minutes, stirring halfway.
- Remove skillet from oven and top with brie cubes, dried cranberries, and thyme. Return to oven and bake for 10 more minutes, until brie is melted.
- Sprinkle with chopped pecans and serve warm.
