Description

A warm and savory skillet bake featuring caramelized sweet potatoes, creamy brie, and tart cranberries, perfect for a cozy meal.


Ingredients

For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 8 oz brie cheese, rind removed and cubed
  • 1/2 cup dried cranberries
  • 2 tbsp fresh thyme leaves
  • 1/4 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Toss sweet potato cubes with olive oil, maple syrup, smoked paprika, salt, and pepper. Spread in a cast-iron skillet and roast for 20 minutes, stirring halfway.
  3. Remove skillet from oven and top with brie cubes, dried cranberries, and thyme. Return to oven and bake for 10 more minutes, until brie is melted.
  4. Sprinkle with chopped pecans and serve warm.

Notes

You can customize the seasonings to taste.
