For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 ripe pears, cored and thinly sliced
- 1 tablespoon maple syrup
- 4 ounces brie cheese, sliced
- 1/2 cup pecans
- 1 tablespoon butter
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, smoked paprika, salt, and pepper. Arrange on a baking sheet and roast for 20 minutes, flipping halfway, until tender and caramelized.
- In a separate bowl, toss pear slices with maple syrup. Add to the baking sheet with sweet potatoes during the last 10 minutes of roasting until pears are soft and slightly caramelized.
- While vegetables roast, melt butter in a skillet over medium heat. Add pecans, cinnamon, and cayenne, stirring until toasted and fragrant, about 3-4 minutes. Set aside.
- Top each sweet potato round with a slice of brie. Return to oven for 2-3 minutes until cheese is melted.
- Arrange rounds on a serving platter. Top with roasted pears, spiced pecans, and a sprinkle of fresh thyme. Serve warm.
