A savory-sweet appetizer featuring caramelized sweet potato rounds topped with melted brie, roasted pears, and crunchy spiced pecans.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 ripe pears, cored and thinly sliced
  • 1 tablespoon maple syrup
  • 4 ounces brie cheese, sliced
  • 1/2 cup pecans
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, smoked paprika, salt, and pepper. Arrange on a baking sheet and roast for 20 minutes, flipping halfway, until tender and caramelized.
  2. In a separate bowl, toss pear slices with maple syrup. Add to the baking sheet with sweet potatoes during the last 10 minutes of roasting until pears are soft and slightly caramelized.
  3. While vegetables roast, melt butter in a skillet over medium heat. Add pecans, cinnamon, and cayenne, stirring until toasted and fragrant, about 3-4 minutes. Set aside.
  4. Top each sweet potato round with a slice of brie. Return to oven for 2-3 minutes until cheese is melted.
  5. Arrange rounds on a serving platter. Top with roasted pears, spiced pecans, and a sprinkle of fresh thyme. Serve warm.

You can customize the seasonings to taste.
