For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 4–5 tablespoons ice water
- 2 medium sweet potatoes, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon smoked paprika
- 1/2 cup crumbled feta cheese
- 1 tablespoon fresh thyme leaves
- 1 egg, beaten (for egg wash)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). In a food processor, combine flour and salt. Add chilled butter and pulse until mixture resembles coarse crumbs. Gradually add ice water until dough comes together.
- Roll out dough into a 12-inch circle on a floured surface. Transfer to a parchment-lined baking sheet.
- In a bowl, toss sweet potato slices with olive oil, honey, and smoked paprika. Arrange slices in overlapping layers on the dough, leaving a 2-inch border.
- Sprinkle feta and thyme over the sweet potatoes. Fold edges of dough over the filling, pleating as needed.
- Brush dough with egg wash. Bake for 30-35 minutes until crust is golden and sweet potatoes are tender.
