Description

A savory-sweet side dish featuring tender caramelized sweet potatoes, creamy feta, crunchy walnuts, and a spicy honey drizzle.

For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts, roughly chopped and toasted
  • 2 tablespoons honey
  • 1/4 teaspoon red pepper flakes

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, brown sugar, smoked paprika, salt, and pepper on a baking sheet.
  2. Roast for 25-30 minutes, stirring halfway, until tender and caramelized at the edges.
  3. While potatoes roast, toast walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant, then set aside.
  4. In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes to infuse, then remove from heat.
  5. Transfer roasted sweet potatoes to a serving dish, top with feta and toasted walnuts, and drizzle with hot honey. Serve warm.
