For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 1/2 cup fresh raspberries
  • 1/4 cup crumbled goat cheese
  • 1/4 cup walnuts, toasted
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 25-30 minutes until tender and caramelized.
  2. While potatoes roast, prepare the glaze: In a small saucepan, combine honey and raspberries. Simmer over low heat for 5-7 minutes, mashing raspberries, until slightly thickened. Strain if desired for a smoother glaze.
  3. Toast walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant, then set aside.
  4. Arrange roasted sweet potatoes on a serving platter. Drizzle with raspberry honey glaze, then top with crumbled goat cheese, toasted walnuts, and fresh thyme.
