For the Crust:
- 2 large sweet potatoes, scrubbed and sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 4 ounces goat cheese, softened
- 1/4 cup heavy cream
- 1 tablespoon honey
- 1/2 teaspoon red pepper flakes
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Arrange potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and caramelized at the edges.
- While potatoes roast, prepare whipped goat cheese: In a medium bowl, combine softened goat cheese and heavy cream. Whip with a hand mixer or whisk until light and fluffy. Set aside.
- Make hot honey: In a small saucepan, warm honey over low heat. Stir in red pepper flakes and let infuse for 5 minutes, then remove from heat.
- To serve, spread whipped goat cheese on a platter, top with roasted sweet potatoes, drizzle with hot honey, and garnish with fresh thyme.
