A stunningly simple dish featuring roasted sweet potatoes with a crispy, caramelized exterior, topped with creamy whipped goat cheese and a drizzle of spicy-sweet hot honey.

For the Crust:

  • 2 large sweet potatoes, scrubbed and sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 ounces goat cheese, softened
  • 1/4 cup heavy cream
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Arrange potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and caramelized at the edges.
  4. While potatoes roast, prepare whipped goat cheese: In a medium bowl, combine softened goat cheese and heavy cream. Whip with a hand mixer or whisk until light and fluffy. Set aside.
  5. Make hot honey: In a small saucepan, warm honey over low heat. Stir in red pepper flakes and let infuse for 5 minutes, then remove from heat.
  6. To serve, spread whipped goat cheese on a platter, top with roasted sweet potatoes, drizzle with hot honey, and garnish with fresh thyme.
