A sweet and savory side dish featuring tender caramelized sweet potatoes, creamy goat cheese, and toasted walnuts for a delightful crunch.

For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/2 cup crumbled goat cheese
  • 1/2 cup chopped walnuts, toasted
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper.
  2. Spread sweet potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, until tender and caramelized.
  3. Drizzle honey over roasted sweet potatoes and toss gently. Top with crumbled goat cheese and toasted walnuts.
  4. Garnish with fresh parsley and serve warm.
