For the Crust:
- 2 medium sweet potatoes, peeled and cubed
- 1 small butternut squash, peeled and cubed
- 2 large carrots, peeled and sliced
- 2 medium beets, peeled and cubed
- 4 cups fresh spinach
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup cottage cheese
- Fresh thyme for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potatoes, butternut squash, carrots, and beets with olive oil, maple syrup, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Spread vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway, until tender and caramelized at the edges.
- While vegetables roast, heat a skillet over medium heat. Add spinach and cook for 2-3 minutes, stirring until wilted and lightly caramelized. Season with a pinch of salt.
- To serve, divide roasted vegetables among plates, top with caramelized spinach, and spoon cottage cheese over the top. Garnish with fresh thyme if desired.
