For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup whole milk
  • 1/4 cup dark rum
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and rum.
  3. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and allspice.
  4. Gradually mix dry ingredients into the wet mixture, alternating with milk, until just combined.
  5. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
