For the Crust:
- 4 large carrots, peeled and sliced into 1/2-inch rounds
- 1 tbsp olive oil
- Salt and black pepper to taste
- 4 oz brie cheese, sliced
- 1/4 cup cranberry sauce
- 1/4 cup pecans, chopped
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrot rounds with olive oil, salt, and pepper, then arrange on a baking sheet.
- Roast for 20-25 minutes until tender and lightly browned.
- Top each carrot round with a slice of brie and return to the oven for 3-5 minutes until cheese is melted.
- Remove from oven, spoon cranberry sauce over each round, and sprinkle with pecans and fresh thyme before serving.
