Description

A delightful appetizer featuring roasted carrot rounds topped with creamy brie, sweet cranberry sauce, and crunchy pecans.

For the Crust:

  • 4 large carrots, peeled and sliced into 1/2-inch rounds
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 4 oz brie cheese, sliced
  • 1/4 cup cranberry sauce
  • 1/4 cup pecans, chopped
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrot rounds with olive oil, salt, and pepper, then arrange on a baking sheet.
  2. Roast for 20-25 minutes until tender and lightly browned.
  3. Top each carrot round with a slice of brie and return to the oven for 3-5 minutes until cheese is melted.
  4. Remove from oven, spoon cranberry sauce over each round, and sprinkle with pecans and fresh thyme before serving.

Notes

You can customize the seasonings to taste.
