For the Crust:
- 2 boneless, skinless chicken breasts
- 1 ripe avocado, sliced
- 1 cup corn kernels (fresh or thawed frozen)
- 4 cups mixed salad greens (e.g., spinach, arugula)
- 1/2 red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Optional: cherry tomatoes, cilantro, or crumbled feta for garnish
Instructions
1. Prepare the Crust:
- Season chicken breasts with smoked paprika, salt, and pepper. Heat 1 tablespoon olive oil in a grill pan or skillet over medium-high heat. Cook chicken for 6-7 minutes per side until charred and cooked through. Let rest for 5 minutes, then slice.
- In a small bowl, whisk together remaining olive oil, lime juice, salt, and pepper to make the dressing.
- In a large bowl, combine salad greens, corn, red onion, and avocado slices. Drizzle with half the dressing and toss gently.
- Divide the salad mixture into bowls. Top with sliced chicken and drizzle with remaining dressing. Garnish as desired and serve immediately.
