For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado, sliced
  • 1 cup corn kernels (fresh or thawed frozen)
  • 4 cups mixed salad greens (e.g., spinach, arugula)
  • 1/2 red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: cherry tomatoes, cilantro, or crumbled feta for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with smoked paprika, salt, and pepper. Heat 1 tablespoon olive oil in a grill pan or skillet over medium-high heat. Cook chicken for 6-7 minutes per side until charred and cooked through. Let rest for 5 minutes, then slice.
  2. In a small bowl, whisk together remaining olive oil, lime juice, salt, and pepper to make the dressing.
  3. In a large bowl, combine salad greens, corn, red onion, and avocado slices. Drizzle with half the dressing and toss gently.
  4. Divide the salad mixture into bowls. Top with sliced chicken and drizzle with remaining dressing. Garnish as desired and serve immediately.
