For the Crust:
- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1 cup jasmine rice, cooked according to package directions
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- Juice of 1 lime
- 2 tbsp fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- Preheat a grill or grill pan over medium-high heat. Brush salmon fillets with olive oil and season with smoked paprika, salt, and black pepper.
- Grill salmon for 4-5 minutes per side, until charred on the outside and cooked through. Remove from heat and let rest.
- In a medium bowl, combine diced mango, avocado, red onion, jalapeño, lime juice, and cilantro. Gently toss to mix and season with salt to taste.
- To serve, divide cooked jasmine rice among plates, top with a salmon fillet, and spoon the mango-avocado salsa generously over the salmon.
