For the Crust:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 cup shredded sharp cheddar cheese
- 1/4 cup hot honey (store-bought or homemade)
- 2 tablespoons melted butter
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
- In another bowl, mix milk, oil, and egg until combined, then stir into dry ingredients until just moistened.
- Fold in shredded cheddar cheese, then spoon batter into muffin cups, filling each about 3/4 full.
- Bake for 12-15 minutes until golden and a toothpick inserted comes out clean.
- Let cool slightly, then drizzle with hot honey and melted butter before serving.
