Description

Savory cornbread muffins loaded with sharp cheddar cheese and drizzled with spicy-sweet hot honey for a perfect appetizer or side.

For the Crust:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup hot honey (store-bought or homemade)
  • 2 tablespoons melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix milk, oil, and egg until combined, then stir into dry ingredients until just moistened.
  4. Fold in shredded cheddar cheese, then spoon batter into muffin cups, filling each about 3/4 full.
  5. Bake for 12-15 minutes until golden and a toothpick inserted comes out clean.
  6. Let cool slightly, then drizzle with hot honey and melted butter before serving.

Notes

You can customize the seasonings to taste.
