For the Crust:
- 4 boneless, skinless chicken thighs
- 1 large onion, thinly sliced
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until soft and caramelized, about 10-12 minutes. Remove onions from skillet and set aside.
- Season chicken thighs with garlic powder, smoked paprika, salt, and pepper. In the same skillet, add chicken and cook for 5-6 minutes per side until browned and cooked through.
- Return caramelized onions to the skillet with the chicken. Pour BBQ sauce over the chicken and onions, stirring to coat evenly. Simmer for 2-3 minutes.
- Sprinkle shredded cheddar cheese over the chicken. Cover the skillet and cook on low heat until cheese is melted, about 3-4 minutes. Garnish with fresh parsley if desired and serve hot.
