Juicy chicken thighs cooked in a skillet with sweet caramelized onions, smothered in tangy BBQ sauce and melted cheese for a comforting one-pan meal.

For the Crust:

  • 4 boneless, skinless chicken thighs
  • 1 large onion, thinly sliced
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until soft and caramelized, about 10-12 minutes. Remove onions from skillet and set aside.
  2. Season chicken thighs with garlic powder, smoked paprika, salt, and pepper. In the same skillet, add chicken and cook for 5-6 minutes per side until browned and cooked through.
  3. Return caramelized onions to the skillet with the chicken. Pour BBQ sauce over the chicken and onions, stirring to coat evenly. Simmer for 2-3 minutes.
  4. Sprinkle shredded cheddar cheese over the chicken. Cover the skillet and cook on low heat until cheese is melted, about 3-4 minutes. Garnish with fresh parsley if desired and serve hot.
