For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 8 oz rotini pasta
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Cook the rotini pasta according to package directions until al dente, then drain and set aside.
- Season the chicken cubes with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken until browned and cooked through, about 6-8 minutes.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer.
- Reduce heat to low and stir in the cheddar and Parmesan cheeses until melted and smooth. Add the cooked rotini to the skillet and toss to coat evenly in the sauce.
- Garnish with fresh parsley and serve immediately.
