Description

A delicious and satisfying crustless quiche loaded with tender potatoes, fresh spinach, and melty cheese, perfect for a hearty breakfast or brunch.

For the Crust:

  • 4 large eggs
  • 1 cup milk
  • 2 cups shredded potatoes, squeezed dry
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. In a large bowl, whisk together eggs and milk until well combined.
  3. Stir in shredded potatoes, spinach, cheddar cheese, onion, garlic powder, salt, and pepper.
  4. Pour the mixture into the prepared pie dish and spread evenly.
  5. Bake for 30-35 minutes, or until the top is golden and the center is set.
  6. Let cool for 5 minutes before slicing and serving.
