A delicious and easy crustless quiche packed with tender potatoes, fresh spinach, and melty cheese, perfect for a hearty breakfast or brunch.

For the Crust:

  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 2 cups diced potatoes
  • 2 cups fresh spinach, chopped
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
  2. Heat olive oil in a skillet over medium heat. Add diced potatoes and onion, cook until potatoes are tender, about 8-10 minutes.
  3. Add garlic and spinach to the skillet, cook until spinach wilts, about 2 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and paprika.
  5. Stir in the potato-spinach mixture and shredded cheese into the egg mixture.
  6. Pour the mixture into the prepared pie dish and bake for 30-35 minutes, or until the center is set and the top is golden.
  7. Let cool for 5 minutes before slicing and serving.

Notes

You can customize the seasonings to taste.
