For the Crust:
- 1 package (20 oz) cheese ravioli
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil and cook ravioli according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and mushrooms, and sauté until mushrooms are tender, about 5-7 minutes.
- Add spinach and sun-dried tomatoes to the skillet, and cook until spinach is wilted, about 2-3 minutes.
- Add the cooked ravioli to the skillet, sprinkle with Italian seasoning, salt, and pepper. Toss gently to combine.
- Sprinkle with Parmesan cheese before serving.
