For the Crust:
- 4 large tomatoes, sliced
- 2 cups cottage cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 cup chopped fresh parsley
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- Arrange tomato slices in a single layer in the baking dish. Season with salt, pepper, and half of the oregano and basil.
- In a bowl, mix cottage cheese, minced garlic, remaining oregano, and basil. Spread evenly over the tomatoes.
- Sprinkle mozzarella and Parmesan cheeses on top. Drizzle with olive oil.
- Bake for 25-30 minutes, until cheese is bubbly and golden. Garnish with fresh parsley before serving.
