A comforting, low-carb Mediterranean-inspired bake featuring juicy tomatoes, savory cottage cheese, and a golden, cheesy topping.


Ingredients

For the Crust:

  • 4 large tomatoes, sliced
  • 2 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Arrange tomato slices in a single layer in the baking dish. Season with salt, pepper, and half of the oregano and basil.
  3. In a bowl, mix cottage cheese, minced garlic, remaining oregano, and basil. Spread evenly over the tomatoes.
  4. Sprinkle mozzarella and Parmesan cheeses on top. Drizzle with olive oil.
  5. Bake for 25-30 minutes, until cheese is bubbly and golden. Garnish with fresh parsley before serving.
