A comforting, low-carb bake with Mediterranean flavors, featuring juicy tomatoes, creamy cottage cheese, and a golden, cheesy topping.

For the Crust:

  • 2 cups cottage cheese
  • 4 medium tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Layer half the tomato slices in the dish. Spread cottage cheese evenly over tomatoes, then sprinkle with minced garlic, oregano, basil, salt, and pepper.
  3. Top with remaining tomato slices. Drizzle with olive oil, then cover with mozzarella and Parmesan cheeses.
  4. Bake for 25-30 minutes, until cheese is bubbly and golden. Let cool slightly, garnish with fresh basil, and serve warm.
