A bold and spicy homemade jam that combines sweet cherries with smoky chipotle peppers, perfect for glazing meats or spreading on toast.

For the Crust:
- 4 cups fresh or frozen pitted cherries
- 2 cups granulated sugar
- 1/4 cup apple cider vinegar
- 2 chipotle peppers in adobo sauce, minced
- 1 tablespoon adobo sauce from the can
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 packet (1.75 oz) powdered pectin
Instructions
1. Prepare the Crust:
- In a large pot, combine cherries, sugar, vinegar, chipotle peppers, adobo sauce, smoked paprika, cinnamon, and salt. Bring to a boil over medium-high heat, stirring frequently.
- Reduce heat to medium and simmer for 20 minutes, stirring occasionally, until cherries break down and mixture thickens slightly.
- Stir in powdered pectin and cook for an additional 5 minutes, until jam reaches a thick, spreadable consistency. Remove from heat and let cool slightly.
- Ladle jam into sterilized jars, leaving 1/4 inch headspace. Seal and process in a water bath for 10 minutes, or store in the refrigerator for up to 3 weeks.
