For the Crust:
- 1 sheet puff pastry, thawed
- 2 cups cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon dried lavender
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup crumbled goat cheese
- Fresh basil leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry on the baking sheet. Prick all over with a fork, leaving a 1-inch border around the edges.
- Toss cherry tomatoes with olive oil, salt, and pepper. Arrange them evenly over the puff pastry.
- Bake for 20-25 minutes until pastry is golden and tomatoes are softened.
- Remove from oven. Drizzle with honey, sprinkle lavender and goat cheese over the top.
- Return to oven for 3-5 minutes until cheese is slightly melted. Garnish with fresh basil before serving.
