Description

A sweet and savory tart featuring roasted cherry tomatoes, drizzled with honey and infused with lavender for a unique, aromatic twist.


Ingredients

For the Crust:

  • 1 sheet puff pastry, thawed
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon dried lavender
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled goat cheese
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry on the baking sheet. Prick all over with a fork, leaving a 1-inch border around the edges.
  3. Toss cherry tomatoes with olive oil, salt, and pepper. Arrange them evenly over the puff pastry.
  4. Bake for 20-25 minutes until pastry is golden and tomatoes are softened.
  5. Remove from oven. Drizzle with honey, sprinkle lavender and goat cheese over the top.
  6. Return to oven for 3-5 minutes until cheese is slightly melted. Garnish with fresh basil before serving.

Notes

You can customize the seasonings to taste.
