A light and flavorful bowl featuring tender chicken meatballs served over fluffy rice, topped with a refreshing dill yogurt sauce.

For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup white rice, uncooked
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced

Instructions

1. Prepare the Crust:

  1. Cook rice according to package instructions and set aside.
  2. In a bowl, combine ground chicken, breadcrumbs, egg, garlic, oregano, salt, and pepper. Mix well and form into 1-inch meatballs.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs for 8-10 minutes, turning occasionally, until browned and cooked through.
  4. In a small bowl, mix Greek yogurt, dill, and lemon juice to make the sauce.
  5. Assemble bowls by dividing rice, meatballs, cucumber, and red onion. Drizzle with dill yogurt sauce before serving.

You can customize the seasonings to taste.
