A quick and flavorful one-bowl meal featuring tender stir-fried chicken, colorful bell peppers, served over fluffy rice with crispy fries for a satisfying crunch.

For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 bell peppers (red and green), sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 1 cup cooked white rice
- 2 cups frozen french fries, baked or fried as per package instructions
- Salt and pepper to taste
- Green onions for garnish
Instructions
1. Prepare the Crust:
- Cook the rice according to package instructions and set aside. Bake or fry the french fries as per package directions until crispy.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and stir-fry until cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add a bit more oil if needed. Stir-fry garlic, onion, and bell peppers until tender-crisp, about 4-5 minutes.
- Return chicken to the skillet. Add soy sauce, oyster sauce, and sesame oil. Stir well to combine and cook for another 2 minutes. Season with salt and pepper.
- To assemble, divide rice among bowls. Top with the chicken pepper stir-fry and a side of crispy fries. Garnish with sliced green onions and serve immediately.
