For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 2 large potatoes, diced
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 1 cup cooked rice
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss diced potatoes with 1 tbsp olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
- Heat remaining olive oil in a skillet over medium heat. Add chicken cubes, season with salt and pepper, and cook for 6-8 minutes until no longer pink.
- In the same skillet, add broccoli and bell pepper. Sauté for 5-7 minutes until tender-crisp.
- Assemble bowls by dividing rice, roasted potatoes, chicken, and veggies. Garnish with fresh parsley and serve warm.
