For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 8 oz cremini mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add chicken cubes and cook until browned, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender, about 5 minutes. Stir in spinach and cook until wilted, about 2 minutes.
- Return chicken to the skillet. Pour in heavy cream, add thyme, salt, and pepper. Stir to combine and simmer for 3 minutes.
- Transfer the mixture to the prepared baking dish. Top evenly with mozzarella and Parmesan cheeses.
- Bake for 20-25 minutes, until bubbly and cheese is golden brown. Let cool for 5 minutes before serving.
