Description

A hearty, one-pan casserole featuring tender chicken, earthy mushrooms, and fresh spinach in a creamy, cheesy sauce, baked to golden perfection.

For the Crust:

  • 2 boneless, skinless chicken breasts, cubed
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add chicken cubes and cook until browned, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender, about 5 minutes. Stir in spinach and cook until wilted, about 2 minutes.
  4. Return chicken to the skillet. Pour in heavy cream, add thyme, salt, and pepper. Stir to combine and simmer for 3 minutes.
  5. Transfer the mixture to the prepared baking dish. Top evenly with mozzarella and Parmesan cheeses.
  6. Bake for 20-25 minutes, until bubbly and cheese is golden brown. Let cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
